Summer’s Bounty Quinoa Salad

Summer’s Bounty Quinoa Salad (serves 6) – This is a simple and fun salad to make, blending the nutty flavors of quinoa, with fresh-picked vegetables, and a tangy oil & vinegar dressing

4 Cups Steamed Quinoa
(Add 1 tbsp. of coconut oil to water while steaming for 15 min)
1 cup chopped cucumber – skin on, seeds removed
1 cup chopped tomato
½ cup finely chopped green or red bell pepper
½ cup finely chopped red onion
¼ cup Red Wine Vinegar
¼ Cup Rice Vinegar
2 tbsp. Extra Virgin Olive Oil
½ tsp each: dried basil, thyme, oregano or 1 tsp each finely minced fresh herbs
Pinch sea salt & fresh ground pepper

Combine all dressing ingredients in glass bowl, mix well & set aside
(I like to make the dressing first to allow the flavors to blend while I am prepping the vegetables and steaming the quinoa)
In large glass or other non-reactive bowl, combine quinoa and all other ingredients, add dressing, stir to distribute evenly. Chill one hour before serving

Serving Suggestions:
Serve as a side dish with your favorite grilled protein
This recipe is meant to utilize fresh produce from your own garden or local farmers’ market. Feel free to experiment with other vegetables: beans, snap peas, squash, etc…
Delicious served on a bed of greens and topped with sliced chicken or beef
Try adding some locally sourced artisan cheese!
